Paula Deens Fried Gator
Ingredients
1 lb. alligator meat, cut into chunks
salt & fresh ground pepper
flour for dreging
1 cup buttermilk
1 cup hot sauce
ranch dressing for dipping
Heat Deep Fryer to 250 degrees
Lightly season gator with salt &
pepper before dredging in flour.
Combine buttermilk & hot sauce into
one mixture.
Dip the gator into buttermilk hot
sauce mixture before dredging once
again in flour. Then place in your
deep fryer until golden brown, a
couple of minutes.
Drain on paper towel & serve with
ranch dressing.
Cajun Potato Salad
Ingredients
5 lbs. new potatoes cut into bite size pieces
2 lbs. shrimp
1/4 cup crab boil seasoning
1 1/2 cups of Hellman's Mayonnaise
1/2 lb. bacon, cooked & crumbled
2 tablespoons creole mustard
one tablespoon worcestershire
1/2 celery, finely chopped
6 boiled sliced eggs
2 teaspoons creole seasoning
1/2 teaspoon pepper seasoning
1/2 teaspoon garlic powder
1/4 cup sweet relish
1. Wash & cut New Potatoes similiar in size.
2. Boil them till tender in crab/shrimp boil seasoning in
a large pot.  Drain the water from the potatoes into
another pot and leave the potatoes in the pot.
3.Bring the water to a boil & add the shrimp. Cook the
shrimp until pink>>>>do not overcook.
4. Do not wash the potatoes off, the mayo cuts the
spice. Remove the shrimp from the water and peel
and cut up if needed.
5. Combine the potatoes, the shrimp, the celery, the
sliced eggs & crumbled bacon.
6. In a separate bowl, combine the mayo, creole
mustard, worcestershire, creole seasoning, pepper &
garlic powder & mix well.
7. Mix the above mixture with the other bowl of
potatoes, eggs, celery, shrimp & bacon, mix well
and refrigerate.

1 1/3 lbs.of turtle meat
4 1/2 cups of water
2 medium onions
1 bay leaf
1/4 teaspoon of cayenne pepper
1 1/4 teaspoon salt
5 tablespoons of butter, cubed
1/3 cup of all purpose flour
3 tablespoons of tomato puree
3 tablespoons of worchestershire sauce
1/3 cup of chicken broth
2 boiled large eggs chopped
1/4 cup lemon juice
chopped fresh parsley
Turtle Soup
Ingredients
Instructions
In a heavy 4 quart saucepan, bring
turtle water and meat to a boil. Skim off
the foam. Chop one onion and set
aside, quarter the other onion and add
to saucepan along with a bay leaf,
cayenne pepper and salt.

Cover and simmer for 2 hours or until
turtle meat is tender, Remove meat with
a slotted spoon and cut into 1/2 inch
cubes, set aside. Strain broth and set
aside.

Rinse and dry saucepan and melt butter
over medium heat. Cook chopped onion
until tender.

Add flour, cook and stir until bubbly and
lightly browned.

Whisk in rest of broth, cook and stir until
thickened. Reduce heat stir in tomato
puree and worchestershire. Simmer.
Uncover, for 10 minutes, add chicken
broth, eggs, lemon juice and meat.
Simmer for 5 minutes or till heated
through. Garnish with parsley.
These turtles are in the bayou.
