Green Goblin Punch
3 cups apple juice
3 cups plain seltzer
corn syrup
colored sugar crystals black
2 cups prepared  green jello
Combine apple juice & seltzer ina
pitcher & chill. Dunk rims of serving
glasses in corn syrup. Gently
shake off excess syrup or use a
small thin paintbrush to wipe off
excess. Place glasses upside down
on wax paper in frig to set.
When ready to serve place
spoonfuls of jello in decorated
glasses & fill with apple juice
mixture.
1 1/2 ozs. gin
1 1/2 ozs. green creme de menthe
splash of lime juice
garnish: mint leave
The Green Devil
Pour all your ingredients into a shaker with
ice. Shake & strain into a high ball glass.
Green Bat-inis
! cup fresh squeezed lemon juice
1/4 - 1/2 cup sugar
1/2 cup fresh mint leaves
1 cup sparkling mineral water
dash of ginger ale
2 - 3 cups of ice
1 cup of vodka
have your vodka & mineral water in the
freezer so its really cold
Chill 4 serving glasses in the freezer. Combine
lemon juice,sugar,mint, mineral water, gunger
ale & ice in a blender. Slowly blend until thick.
Remove the 4 glasses from the freezer & pour a
jigger (1/4 cup) of vodka into each. Top with
frozen lemon mixture. Makes 4 servings.
Embalming Fluid
1 1/2 ozs. mandarin vodka
1/2 oz. sour apple mix
1/2 oz. lime juice
4 ozs. ginger ale
2 drops green food coloring
Mix all the ingredients in a
shaker over ice. Shake twice &
serve in your most ghoulish
glasses
Applesauce Empanadas
Ingredients
1 cup all purpose flour
2 teaspoons of sugar
1/4 teaspoon salt 6 tablespoons butter,
chilled & cut into 1/2 inch cubes
1 egg
1/4 cup applesauce
cinnamon sugar for sprinkling
6ozs. Philly cream cheese chilled cut into
1/2 inch cubes
Add flour, sugar, salt to food processor, pulse
to mix. Add butter & process until it resembles
wet sand. Add cheese until dough clumps.
Place on floured surface, knead 2-3 times to
incorporate the cream cheese. Shape dough
into an oval disk. Place in a bag & chill 15-30
minutes.
Roll into a rectangle 15x10. Cut out 6
squares that are 5x5 inches. Beat 1
teaspoon of water & the egg to make a egg
wash.
Fill the squares with 2 teaspoons of
applesauce. Use fingers to moisten. Fold
dough over to create a triangle. Seal &
crimp. Brush with the egg wash. Sprinkle on
cinnamon sugar. Bake on a parchment lined
cookie sheet until golden brown. About 15
minutes.
Special Note: Add a pinch of
tumeric for orange tinted dough.
Can use any flavor pie filling.
Pumpkin Pie Tarts
Ingredients for pie dough
2 cups sifted flour
1/2 cup corn oil
1 teaspoon salt
1/4 cup skim milk
Mix pie dough ingredients together & roll
between your hands into a small ball of
dough. Press the ball into a shell against the
tart pan wall. This is a very soft dough. Roll
into a golf size ball & press in.
Ingredients for filling
1 16oz. can cooked pumpkin
1 12oz. can evaporated skim milk
3/4 cup sugar
whites of 3 extra large eggs or 4
large eggs
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
Mix all the ingredients but the egg
whites. Lightly whip the whites & fold
into the pumpkin mixture. Fill the tart
pans & bake at 350 degrees for 50
minutes.
6 - 15 tarts, depend on size
Kabob Platters
I think Kabob Platters are always a good choice for parties. People just love
to munch on that kind of chow. You can skewer all your kabobs in advance
with food that is already cooked, all you have to do is heat it up before
sending them out to the crowd. Large platters of these tasty little morsels
could easily pass for various body parts along with each of them having
their own dipping sauce.
They make for a beautiful presentation on your party table. The sauces can be served
in small gourds with leaves spread around on the table...its very Fallish looking!
Kabob Ideas
Bourbin Chicken - white meat, colored pepper, onion chunks,
cherry tomato, marinated in buffalo sauce.

Polynesian Pork - cunks of pork tenderloin, pineapple, green
pepper, onion chunks, cherry tomato marinated in
polynesian/pineapple marinade.

Savory Shrimp - large whole shrimp, cherry tomato, chunks
of pepper, onion chunks marinated in zesty marinade.

Italian Sausage - mildly seasoned & sliced hot sausage,
cherry tomato, mushroom cap, pepper chunk marinated in
marinara sauce.

BBQ Meatball - meatballs, pepper chunk, onion chunks in
tangy BBQ sauce.

Texas BBQ - tender chunks of BBQ beef

Asian Beef -  tender chunks of beef in teriyaki sauce

Sweet n Sour Pork - tender chunks of pork tenderloin, green
pepper chunks, onion chunks, pineapple chunks in sweet n
sour sauce.

Mexican Beef - tenders chunks of chuck roast,  green pepper
chunks, onion chunks marinaded in a salsa marinade.
Offer guests a good selection of choices. Have a shrimp, pork,meat,
sausage & chicken selection. sauces should run from cool to spicy to
hot. Along with the platter of meat, chicken & fish selections, have a
complementary platter of kabobs of fruit, veggies & cheeses. You should
also offer sauces for these items too.
Side Kabobs to accompany meat platters
These should be miniature Kabobs
Put 2 - 4 kinds of Kabobs on one platter
Sauces that accompany the Kabobs should simply
be the marinades you use. Some folks just serve
the Kabobs marinated but I like to offer additional
sauce incase guests want to do a little dipping. The
sauces look great in little gourds.

Strawberry Stuffed Baked Brie
Ingredients
1 wheel 2 - 3lbs. of brie
1/2 cup strawberry preserves
1/3 cup toasted almonds finely chopped
1 lb. frozen puff pastry thawed
pam spray
1 egg yolk
Carefully lay cheese on its side & using a
long sharp knofe horizontally cut it in half.
Spread the preserves on the cut side of the
bottom layer of cheese. Sprinkle on the nuts.
Replace the top 1/2 of the brie.
Roll out the puff pastry into a circle about double the
diameter of the wheel of brie. Place the brie in the
center of the pastry. Gather up the edges &
decoratively twist together.
Preheat oven to 375 degrees, spray a large baking
sheet with Pam. Beat the egg & brush over the pastry.
Bake about 40 minutes until pastry is evenly puffed &
brown. Serve warm at room temperature.
Serve with toasted french bread, sliced apples, grapes & crackers.
Ingredients for sauce
1 cup sugar
2 tablespoons flour
1/2  teaspoon salt
1 3/4 cups pineapple juice
2 eggs beaten
1 tablespoon lemon juice
Ingredients for pasta
3 cups water
1 tablespoon cooking oil
2 teaspoons salt
16 oz. Acini de Pepe pasta
Ingredients for the rest
3 (11oz.) cans mandarin oranges
2 (20 oz.) cans pineapple chunks drained
1 can crushed pineapple (20 oz.)
1 cup mini marshmellows
1 cup coconut
1 (9 oz. ) tub of cool whip
For the sauce combine sugar, flour & salt stir in the pineapple
juice & eggs. Cook over medium heat stirring untl thick. Add
lemon juice. Cool at room temperature. Boil pasta, salt & oil until
done.Carefully mix the pasta into the sauce. Refrigerate overnight.
Add the fruit & other ingredients the next day. Serves 25
Witches Frog Eye Salad
Croc Cheese Dip
Ingredients
1 block of velveeta
1 can rotel w/ lime & cilantro drained
1 can diced green chiles drained
2 cooked chicken breast diced
throw in a tomato
Throw everything in the crock pot & go back and
stir every so often. Serve with Tostitos scoops,
pita crisps or crackers

Spider Eggs...Good Vittles
Spinach Ricotta Skulls
Ingredients
1 container 15oz. part skim ricotta cheese
olive oil cooking spray
1 bunch or 10oz. bag fresh spinach, stems removed, washed & dried
1 1/2  (from 1 bunch) loosely packed fresh basil leaves
1/4 teaspoon fresh grated nutmeg
coarse salt & fresh pepper
2 large eggs
1 egg white
crackers for serving
1. Wrap ricotta tightly in cheesecloth, place in a colander over a large bowl.
Place a heavy object (such as a bowl or canned good) on top. Let drain in
refrigerator at least 3 hours or overnight.
A Healthy Item
2. Preheat the oven to 350 degrees. Coat a 10 inch springform pan with Pam.
In a food processor combine drained ricotta, spinach, basil & nutmeg. 1
teaspoon salt & 1/4 teaspoon pepper. Process until smooth about 1 minute,
scraping sides of bowl as needed.
3. Add whole eggs  & egg white, process for 5 seconds. Pour mixture into
prepared pan & bake until set & just brown around the edges. 30 - 35 minutes.
4. Let cool completely on a wire rack, then refrigerate covered until cold,
preferably overnight. To unmold run a paring knife around the edge before
removing side of pan.
5. Cut in quarters using a wide spatula, transfer to a cutting board coated
with cooking spray. Cut out shapes witha skull shaped cookie cutter coated
with cooking spray. (If cutter does't come with eyes & mouth use aspic
cutters to make features.) Using a cotton swab gently press skulls out
directly on crackers, leave eye & nose shapes in cutters.
6. Place crackers on a black posterboard cut & shaped like a coffin.
